Fried Cheese Curds

Here is our first cheese recipe from the Burley test kitchen.   With all that snow blowing outside and the cold temps that we have been getting, we figured a little comfort food would go a long way here at the farm.  Plus, Gary has been working in knee deep snow in the woods every day, so he sure appreciates a hearty snack when he comes in.

Here is the recipe for the deep fried cheese curds:
1 cup beer or milk (I usually use beer)
2 eggs, beaten
1 cup flour
1/2 tsp. salt
1 tsp. baking powder
Fresh cheese curds

Mix all  batter ingredients together in a bowl.  Coat fresh cheese curds with flour, then dip into batter.  Heat oil to 375 degrees Fahrenheit.  Fry curds in hot oil for about one minute.  Remove and enjoy!
